2015 Cabernet Sauvignon

Our first Cabernet.  And what a wonderful triumph it was! This 2015 Cabernet Sauvignon is a blend of ultra premium grapes from two very special vineyards in the Napa Valley:  One in the acclaimed Oak Knoll district and the other in St. Helena, alongside the Napa River.  The wine was barrel-aged for 30 months in both new French oak and neutral American oak to bolster structure and extract just the right amount of Cedar overtones to balance the bold framework of tannins and acidity. 

In the glass admire the deep garnet color and ruby rim. On the nose savor anise notes that give way to sweet tobacco and hints of saddle leather.  On the palate the wine is full-bodied with bold flavors of black cherry and Italian plum which migrate to a subtle earthiness then finishes long with silky tannins and notes of cedar and coffee. This is a vintage that is drinking beautifully now, but is also built to cellar well for years to come. 

Pairs well with a juicy ribeye steak,  grilled lamb chops or a hearty chicken cacciatore.
